ORIGINS: Le Braison is produced in the Southwest of France, a region famous for its sheep’s milk cheesemaking heritage dating back a millennium.  Le Braison is crafted at the Saint-Georges Fromagerie workshop in Le Massegros, a family-run operation with rich family heritage spanning generations. With deep-rooted expertise in cheesemaking, this 60-person team produces a cheese of exceptional quality.
TIP: Le Braison takes its name from the rural tradition of slowly cooking food over a wood fire.
LACAUNE SHEEP: The mark of quality.  Like Roquefort, Le Braison is made with milk from the Lacaune sheep, a local breed that inhabits the Grands Causses Regional Natural Park in the Southwest of France. The sheep graze in the open air between gorges, valleys, and high limestone plateaux, whenever conditions are favorable.  Grazing on pastures rich with flowers and wild herbs makes for a delicately scented milk which, in turn, imparts a quality flavor within the cheese itself. Lacaune sheep are also fed non-GMO, locally produced grains and fodder.
