"Hey there, cheese enthusiasts, I came across this cheese while climbing up the Mont-Blanc in a mountain refuge. Hailing from the stunning Haute-Savoie region, produced in Beaufortain, Tarentaise valley and Maurienne specifically, this cheese is made with raw cow's milk and must be aged at least 5 months. It's got a fruity, nutty flavor that'll remind you of Gruyere and Comte, but with a softer, creamier texture that's simply irresistible. It's crafted from the milk of Montbeliarde and Simmental cows, which graze in lower valleys and hills on diverse pasture vegetations, grass, hay, silage etc.-much like Comte. “As its name suggests, this cheese is more than you need ! This gem from Haute-Savoie is a real delight. Made from raw cow's milk, specifically from the Abondance cows, and aged for a minimum of 3 months, it's got a rich, creamy flavor with hints of hazelnut and fruitiness. It's like Beaufort and Comté, but with a slightly stronger and tangier taste. 

It’s got that distinctive concave rind and a creamy interior that's just waiting to be savored. Abondance originally takes its recognisable concave shape after having been pressed in circular wooden moulds. Originally the mold would be adjusted to the desired diameter with a string.

I find this blue from Auvergne, a mountainous region in central France, to have a softer, less pungent quality. Its flavor is influenced by the region’s rich, volcanic soil, which provides slightly spicy and somewhat nutty notes. "Not all cheeses get better with age, but this orange, moon-like wedge certainly does! Crafted by traditional methods in Brittany, a rugged coastal region of France, the production of Mimolette is a labor of love that results in a dense, slightly oily and utterly addictive cheese. Given its harder texture, I recommend breaking it into wedges for a cheese board (where it nicely adds color), rather than trying to grate it or cook with it.
