The thing I love best about this cheese is that it surprises you. For a semi-hard cheese, it is unusually creamy and smooth—almost to the point of melting in your mouth. (It does, in fact, melt beautifully in a gourmet grilled cheese or a variation on raclette.) The flavor also surprises, blending the sweeter notes of other sheep milk cheeses with a rugged, slightly funky rind that reminds you that it has been aged six months. Pair it with honey or any fruit jam, and its slight tangy qualities will balance things beautifully.
